Ingredients

Instructions

  1. Bring a large pot of water with the egg to a boil.
  2. While the water heats, toast the nuts in a dry skillet until golden brown and fragrant. Blend the toasted nuts with 1/2 cup milk until very finely ground, scraping the sides as needed. Add the remaining milk and blend once more. Chill in the refrigerator for 5 to 10 minutes.
  3. Once the water boils, move the egg and enough boiling water to cover it to a small bowl. Cover with plastic wrap and let stand 10 minutes, then cool and peel. Cut the egg in halves.
  4. Bring water to a boil again, add some salt, and cook the somen noodles following the package directions. Rinse well with cold water and drain.
  5. Roll the noodles tightly and place them at the bottom of 2 serving bowls. Top with the pepper and cucumber strips. Gently pour in the chilled soup, add the egg halves, and sprinkle with black sesame seeds and a generous amount of good-quality sea salt.
  6. If you want it very cold, add some ice just before serving.
