Modo de preparo
- Set the oven to 400°F (204°C).
- Blend the green onions in a food processor until finely diced. Add the raw shrimp and pulse until you have a sticky, chunky mince with visible shrimp pieces.
- Put the mince in a bowl, add the cilantro and mix. Oil your hands, then shape the mixture into meatballs of 1.25-1.5 oz each. Place them on a greased mini-muffin pan or baking sheet.
- Bake 10-12 minutes, until the outsides are slightly golden and the shrimp is no longer grey.
- In a skillet over medium heat, cook the shallot in olive oil for about 3 minutes, until browned and slightly translucent. Add the chicken broth and water and bring to a boil.
- Add the coconut sugar, fish sauce, sesame oil, cinnamon stick and cardamom if using. Lower the heat, cover and simmer at least 20 minutes. Season with salt and pepper to taste.
- While the broth simmers, heat a griddle or skillet on high and spray with olive oil. Sear the bok choy halves about 5 minutes, adding 1 tablespoon of water to the pan while they sear to steam them.
