Ingredients

Instructions

  1. Put the ginger, green chilli, curry leaves, carrot, French beans, capsicum, onion and sweet corn in a chopper and chop everything finely.
  2. Heat the ghee in a pan over high heat until hot. Add the chana dal and urad dal and cook a few seconds until they change colour.
  3. Add the asafoetida, mustard seeds and cumin seeds, then the chopped vegetables and salt. Cook over high heat for 2-3 minutes, lower the heat, add the turmeric, Kashmiri red chilli powder and garam masala, cook briefly, then transfer to a bowl and let it cool completely.
  4. Meanwhile, grind the sprouts in a mixer with the batter ingredients (ginger 1 inch, green chilli, coriander, mint, a splash of water, black pepper, a pinch of salt, cumin), using little water at first, until a thick batter forms.
  5. Transfer the batter to a large bowl, add the cooled vegetables and stir. Add water only if needed so the batter is like idli batter: not too runny, not too thick.
  6. Heat the appe pan over high heat until moderately hot, then grease each mould with a little ghee.
  7. Spoon batter into each mould, cover and cook over medium-low heat for 5-6 minutes.
  8. Remove the lid, flip the appe with a spoon or toothpick and cook until golden on one side. Optionally add a few drops of ghee, cover and cook 2-3 minutes more until the other side is golden too, adding more ghee if needed.
  9. Lift the appe out when golden on both sides and serve on a plate.
