Ingredients

Instructions

  1. Prepare a charcoal grill for two-zone indirect cooking.
  2. Trim excess fat and sinew from the outside of the tenderloin.
  3. Mix the Herbes de Provence, salt and pepper in a shaker. Brush the tenderloin with olive oil and coat it well with the herb mixture.
  4. Leave the tenderloin for 30 minutes to come to room temperature.
  5. Place the tenderloin on the cool side of the grill, away from the coals. Add 2 small chunks of pecan wood to the hot coals for smoke.
  6. Insert a probe thermometer into the centre of the tenderloin and cook until it reaches 125°F, about 40 minutes, turning it halfway through.
  7. Rest the tenderloin 15 minutes, loosely covered with foil. Slice to the desired thickness and serve.
