Ingredients

Instructions

  1. In a large bowl, mix both flours, the oats, bicarbonate of soda and 1 level tsp sea salt. Finely chop the rosemary leaves, stir most into the mix and keep the rest aside.
  2. Make a well, crack in the egg, add the buttermilk and mix with a fork. Gradually draw in the flour from the edges, then bring the dough together with lightly floured hands.
  3. Chop the cheese into chunks and mix it in. Shape into a ball, then flatten into a disc about 3 cm deep. Press a few extra oats and a little sea salt onto the top, score a deep criss-cross, and air-fry at 180°C for 20 minutes.
  4. Rub the reserved rosemary with 1 tsp olive oil, scatter over the bread and cook a further 10 minutes at 180°C, until a firm crust forms and the base sounds hollow when tapped.
  5. Move to a wire rack and serve warm.
