Instructions
- Combine all the sauce ingredients in a bowl and mix well.
- Put the sliced chicken in a separate bowl with 1 tbsp (15 ml) of the sauce, the bicarbonate of soda, and the ground white pepper, and mix to marinate.
- Cook the hokkien noodles according to the packet, stirring now and then to stop them sticking. Drain them while still slightly undercooked, as they'll finish cooking in the wok.
- Heat a wok over high heat and add the avocado oil. Add the chicken and cook for 2 minutes. Add the garlic, prawns, red bell pepper, spring onion, and bok choy, and cook for 2 more minutes, until the prawns are opaque and cooked through.
- Add the drained noodles and the remaining sauce, and cook for 2 minutes, until the sauce is evenly mixed through and coats the noodles. Add a splash of chicken stock if you want a looser sauce. Take off the heat.
- Divide among 5 x 750 ml meal prep containers. Top with sesame seeds and spring onion.
