HIGH PROTEIN Meal Prep Marry Me Chicken In 25 Minutes

Ingredients

Instructions

  1. Boil the pasta in generously salted water for 3 minutes less than the packet says. Drain and set aside.
  2. Toss the diced chicken with the dried Italian herbs, salt and pepper.
  3. Blend the cottage cheese, chicken stock, onion powder, garlic powder, smoked paprika, Parmigiano Reggiano, sun-dried tomatoes, salt and pepper on high for 2-3 minutes until smooth and no longer grainy.
  4. Heat a large, high-sided pan over high heat with the sun-dried tomato oil. Cook the seasoned chicken for 3-4 minutes, stirring occasionally, in batches if the pan is crowded.
  5. Lower the heat to medium-low. Add the drained pasta and the sauce, mix well and cook for 1-2 minutes until combined. Add the spinach and cook for about 1 more minute until wilted, then take off the heat.
  6. Divide into 5 meal prep containers and garnish as you like.
