High-Protein Tuna Patties | Easy Meal Prep Recipe
Ingredients
- Tuna2 cans
- Oats1 cup
- Egg4
- Onion½
- Garlic · minced2 cloves + 2
- Parsley · finely chopped½ bunches
- Salt
- Black pepper
- Chili flake · flakes¼
- Olive oil2–3 tbsp
Instructions
- Drain the tuna well and put it in a large bowl. Grate the onion, mince the garlic, finely chop the parsley and add them to the bowl.
- Blend the oats in a food processor or blender into a coarse flour, about 1–2 minutes, and add to the bowl.
- Season with salt, pepper and chili flakes. Beat the eggs in a small bowl, add them to the tuna mixture and mix well. Let it rest 5–10 minutes so the oats hydrate.
- With damp hands, shape the mixture into 10 patties.
- To pan-fry: heat olive oil in a skillet over medium heat and cook the patties 3–4 minutes per side, until golden and crispy.
- To bake: preheat the oven to 375°F (190°C). Set the patties on a parchment-lined baking sheet, lightly brush or spray with oil, and bake 15–18 minutes, flipping halfway, until lightly golden.
