High Protein Turkish Gozleme
Ingredients
- Greek yoghurt¾ cups
- Flour1 cup
- Baking powder1 tsp
- Extra virgin olive oil1 ½ tbsp
- Salt
- Lemon
- Spinach2 ½ cups
- Feta cheese100 g
- Black pepper
Instructions
- Put the flour, salt and yogurt in a large bowl. If using all-purpose flour, add the baking powder too. Mix with a spoon or one hand until a rough ball forms.
- Turn the dough onto a floured surface and knead for 3 to 5 minutes until smooth. Add more flour if it is sticky or wet. Let it rest for 10 minutes.
- Scrunch the chopped spinach in your hands to soften it. Crumble in the feta, add salt and pepper, and stir together.
- Divide the dough into 2 equal pieces and roll each into a ball.
- On a floured surface, roll one ball into a thin circle about 10 to 12 inches (25 to 30 cm) across, flipping it and dusting with flour often. Roll as thin as you can without tearing.
- Spread half of the spinach mixture evenly over one half of the circle. Fold the dough over the filling and seal the edges with your fingers. Repeat with the second dough.
- Heat a large pan over medium heat with 2 teaspoons olive oil. Put one gozleme in the pan and cook for 3 to 5 minutes until golden.
- Brush or spray the top with oil, flip it with a spatula and gently press it flat.
- When golden brown, remove to a board and cook the second gozleme the same way. Slice into triangles and serve with a squeeze of lemon.
