Hobak bokkeum (호박볶음)
Ingredients
- Zucchini1
- Salt2 tsp
- Garlic · minced1 tsp
- Scallion1
- Sesame oil1 tsp
- Sesame seed1 tsp
- Vegetable oil1 tbsp
- Onion¼
Instructions
- Halve the zucchini lengthwise (quarter it if it is round), then slice it crosswise about 1/4 to 1/3 inch thick.
- Use the saeujeot as is or chop it finely; it is very salty, so start with 2 teaspoons and add more only if needed.
- Heat 1 tablespoon cooking oil in a pan over medium-high heat. Add the zucchini, garlic and saeujeot (or salt or fish sauce) and stir-fry for 2 to 3 minutes.
- While stir-frying, add 2 tablespoons water. Add another spoonful or two of water if the pan gets dry.
- Add the scallion, sesame oil and sesame seeds. Keep cooking until the zucchini is soft and translucent, about 2 to 3 minutes. Do not overcook.
- Taste and add more saeujeot or salt if needed.
