Homemade Alfredo Sauce
Ingredients
- Butter¾ cups
- Garlic · peeled3 cloves
- Vegetable broth¾ cups
- Heavy cream1 ½ cups
- Parmesan cheese · finely grated1 ½ cups
- Salt
- Black pepper
- Tagliatelle16 oz
Instructions
- Melt the butter in a large saucepan over very low heat. Add the garlic cloves and cook for about 5 minutes, until very fragrant. Remove the garlic.
- Meanwhile, bring a large pot of salted water to a boil and cook the fettuccine according to the package directions.
- Add the heavy cream and broth to the butter and whisk. Bring to a gentle simmer, then cook over low heat for 3 to 5 minutes, until slightly thickened.
- Just before serving, take the sauce off the heat and whisk in the Parmesan until melted and slightly thickened. Season with salt and pepper to taste.
- Toss with the cooked pasta. If needed, briefly reheat so the sauce bubbles and clings to the noodles. For a thinner sauce add a little more broth; for a thicker sauce cook it longer or whisk in 1 tbsp cornstarch mixed with 1 tbsp cold water.
- Serve immediately.
