Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment or non-stick foil.
  2. Put the ground pork and ground turkey in a large bowl, add the dried garlic, dried onion, paprika, sea salt, black pepper, maple syrup and chopped parsley, then knead by hand until evenly mixed.
  3. Measure out 6 tablespoons of the mixture per patty, roll each portion into a ball, and press it flat into a patty on the parchment.
  4. To bake: arrange the patties on the lined sheet (they can touch), bake at 400°F for 18 to 22 minutes until the internal temperature reaches 165°F, then pat them dry with paper towels.
  5. To fry instead: press the patties on parchment, heat a large frying pan over medium heat with a drizzle of avocado oil, and fry for about 5 to 6 minutes per side until the internal temperature reaches 165°F.
  6. Toast the English muffins, buttered, on a griddle or in a toaster oven.
  7. Fry the eggs in a large non-stick pan over medium heat with a few teaspoons of melted butter, cooking to your liking; the author prefers over-medium.
  8. Scoop the avocado into a bowl, season with salt, pepper and a squeeze of lemon juice, and mash with a fork into a chunky spread.
  9. Spread mayonnaise on each toasted muffin half, add a generous amount of mashed avocado to one half, then layer a sausage patty, a fried egg and cheese, and close the sandwich.
