Homemade Cauliflower Gnocchi
Ingredients
- Cauliflower · frozen1
- Flour⅔ cups
- Salt1 tsp
Instructions
- Boil the cauliflower in a pot of water over high heat for 5 to 8 minutes, until tender, then drain.
- Spread the cauliflower on a clean towel and let it cool for 5 to 10 minutes.
- Squeeze as much water out of the cauliflower as you can.
- Pulse the cauliflower in a food processor until it forms crumbs, then add the flour and salt and pulse lightly until a soft, sticky dough forms.
- On a floured surface, cut the dough into 4 pieces, roll each into a rope, and cut each rope into small gnocchi.
- Heat a large nonstick skillet over medium heat with a little oil, and brown the gnocchi, in batches if needed.
- Add a splash of water to the pan and cover to steam, so the insides cook through.
- Add the sauce to the pan and toss to combine.
