Ingredients

Instructions

  1. Preheat the oven to 325°F (165°C) fan-assisted and line two baking sheets with parchment paper.
  2. In a medium bowl, mix the oil, 4 tablespoons water, the sugar and vanilla extract.
  3. In another bowl, whisk the flour, baking soda and cinnamon. Stir the wet ingredients into the dry until a dough forms, adding the extra water only if it seems too dry.
  4. Divide the dough in half and roll each piece as thin as possible directly onto a lightly floured sheet of parchment, using a lightly floured rolling pin.
  5. Mix the 2 tablespoons sugar and the ground cinnamon, sprinkle over the dough and press in so it sticks.
  6. Cut the dough into 1/2-inch (12 mm) squares with a pizza cutter or sharp knife, without separating the pieces.
  7. Bake for 22 to 25 minutes, until browned all over. Remove and let cool and crisp.
