Ingredients

Instructions

  1. Soak the dried chickpeas in plenty of water overnight, for at least 8 hours, in a bowl with room for them to double in size.
  2. Drain, then pulse the soaked chickpeas in a food processor a few times until chopped.
  3. Roughly chop all the herbs and add them to the processor with the other ingredients.
  4. Blitz until everything is combined and finely chopped, but keep some texture.
  5. With wet hands, roll the mixture into balls using a tablespoon, place them on a baking-paper-lined tray and refrigerate for 1 hour.
  6. To make the sauce, put all the tahini sauce ingredients in a bowl and whisk until creamy. If too thick, add more water.
  7. Deep fry: heat oil and fry the falafel for a few minutes until golden on each side, in batches so they do not touch. Drain on paper towels.
  8. Air fry: preheat the air fryer to 350°F/180°C. Place the balls in a single layer without touching and spray the tops with olive oil. Cook for 11-13 minutes until golden, then turn, spray the tops again and cook for another 2 minutes.
