Homemade Flaatbread
Ingredients
- Yeast7 g
- Olive oil4 tbsp
- Bread flour780 g
- Sugar1 ½ tsp
- Salt1 ½ tsp
Instructions
- Put the yeast in a stand mixer bowl (or large bowl), add the warm water, stir and leave for 5 minutes until foamy.
- Add the olive oil, flour, sugar and salt to the yeast mixture.
- Mix until combined, using a stand mixer with a dough hook or by hand.
- Knead the dough for 10 minutes. If kneading by hand, oil your hands and work surface lightly.
- Place the dough in an oiled bowl, cover, and let prove for 60-90 minutes, until doubled in size.
- Lightly flour the work surface. Divide the dough into 12 equal pieces, and shape into balls if you like, resting them under a damp cloth.
- Roll each piece into a round about 19 cm (7.5 inches) across and ½ cm (just under ¼ inch) thick.
- Lightly oil a medium frying pan (cast iron works best) with about 1/4 tsp oil and heat over medium-high heat.
- Shake off excess flour from the dough, then place the flatbread in the pan. Cook 60-90 seconds until bubbles form, then flip and cook another minute.
- Brush the pan with oil after every 3 or 4 breads, and stack the flatbreads on a plate under a clean tea towel to keep them soft and warm.
