Instructions

  1. Scald the milk over medium-low heat, stirring constantly, until it steams and reaches 180°F; remove from heat and cool to 115°F.
  2. In a large bowl, whisk together 1 cup flour, 1/4 cup sugar, the yeast and 1/4 tsp salt.
  3. Whisk in the 2/3 cup warm milk, 1/4 cup oil, 2 egg yolks and 1/2 tsp vanilla, then cover and rest 10 to 15 minutes until bubbles form on the surface.
  4. Mix in most of the remaining 1 1/2 cups flour with a firm spatula, adding only enough until the dough holds together and no longer sticks to the bowl (use the last 2 Tbsp only if needed).
  5. Knead the dough in the bowl by hand for 5 minutes, dusting with flour only if it sticks heavily. The dough should be soft and slightly sticky.
  6. Cover and let rise in a 100°F oven for 45 minutes, or at room temperature for 1½ to 2 hours, until doubled.
  7. Roll the dough to 1/4 to 1/3 inch thick on a floured surface and cut 11 to 12 donuts and donut holes. Gently press scraps together and re-roll if desired.
  8. Place donuts and holes on a parchment-lined tray with space between them, cover and let rise 20 minutes in a warm place, or 45 minutes at room temperature, until puffed.
  9. Stir all glaze ingredients in a bowl until the sugar dissolves, then set aside.
  10. Heat oil to 375°F in a Dutch oven or deep fryer. Fry 2 donuts at a time for 45 to 60 seconds per side, flipping once, until golden on both sides.
  11. Dip each donut in the glaze on both sides immediately after frying, then place on a wire rack.
  12. Fry and glaze the donut holes in two batches. Serve once the glaze has set.
