- Salt1 tsp
- Vinegar1 tsp
- Olive oil10 tbsp + ¼ cups
- Lamb3–4 lb
- Black pepper · crackedto taste
- Onion · chopped1
- Garlic · grated3–4
- Scallion · thinly sliced4–5
- Spinach1 lb
- Dill · dried1 tsp
- Feta cheese6 oz
- Parmesan cheese · shredded4 oz
- Sesame seed
Instructions
- Make the dough: whisk the water, salt, olive oil and vinegar in a mixer bowl fitted with the hook. Add the flour and knead on low speed for about 5 minutes until smooth and soft, adding 2-3 tablespoons warm water if too dry.
- Transfer the dough to a bowl, drizzle with 1-2 tablespoons olive oil, toss to coat, cover and rest while preparing the filling.
- Season the lamb on both sides with salt and pepper. In the Instant Pot with the olive oil, brown the lamb on Saute about 10 minutes per side (or brown in a pot over medium heat).
- Add the garlic and 1 cup of water. Seal and pressure cook on High for 40-50 minutes. Let the pressure release naturally for 15 minutes, then open the vent. If the meat is still firm, pressure cook 10 more minutes. Transfer the meat to a platter to cool.
- Stovetop option: cover the lamb with water almost to the top and cook over medium-low for about 1.5 hours, until very soft and tender, adding water if needed.
- Meanwhile, cook the chopped onion in 3-4 tablespoons oil in a large skillet until soft and golden. Add the scallions and cook 1-2 minutes until warmed through.
- Add the spinach in batches until wilted, season with salt and pepper, and move to a large bowl.
- Crumble in the feta, add the shredded cheese and dill, mix and taste, adjusting salt and pepper. Shred the cooked lamb and mix it into the greens.
- Preheat the oven to 400°F (200°C). Lightly grease a 12-inch (30 cm) round pan.
- Divide the dough into two portions, one slightly larger. Roll the larger one about 2 inches wider than the pan, line the pan, add the filling and smooth it, then fold the overhanging edges over the filling.
- Roll the second piece into a 12-13 inch circle, place over the filling and crimp the edges together. Brush with olive oil, sprinkle with sesame seeds if desired, cut 4 slits on top, and bake on the center rack for about 55 minutes, until golden.
- Cool for 15 minutes before serving.
