- Parsley · chopped¼ cups

- Ground beef1 lb
- Ground pork1 lb
- Olive oil¼ cups
- Marinara sauce3–4 cups
Instructions
- Preheat the oven to 400°F and line a rimmed baking sheet with foil.
- In a large bowl, combine the breadcrumbs, milk, Parmesan, Italian seasoning, salt and pepper, and let stand 10 minutes.
- Stir in the egg, onion, parsley and garlic, then add the beef and pork and mix gently until combined without over-squeezing.
- Divide the mixture into 24 meatballs of about 2 ounces each.
- Oven method: brush the foil with 2 tablespoons olive oil, space the meatballs 1 inch apart, drizzle with the remaining 2 tablespoons oil and bake 18–20 minutes until a thermometer in each meatball reads 160°F. Then broil 1–3 minutes until browned.

- Reduce the heat to medium-low, cover and cook until a thermometer in the center of each meatball reads 165°F.
- Optional: simmer the meatballs in marinara in a covered pot with the lid slightly open over low heat for 20–30 minutes.
