- Cornstarch2 tbsp
- Butter250 g
- Saltto taste
- Lime1 tsp
- Turmeric · powder¼ tsp
- Black pepper1 tsp
Instructions
- In a food processor, pulse the flour, corn starch, salt, black pepper and turmeric for about 1 minute.
- Add the cold butter, cut into pieces, a little at a time, pulsing after each addition until it is worked into the flour.
- Stir 1 teaspoon of lime juice into 2/3 cup of ice-cold water, add it to the processor and pulse again.
- Tip the dough onto the counter, dust with more flour and press it with your fingertips (not your palm) until it comes together.
- Shape the dough gently into a square, wrap it in plastic wrap and refrigerate for 30 minutes.
- Unwrap the chilled dough, dust it with flour and pound it until it is easy to roll.
- Roll the dough to 1/4-inch thickness, brushing off excess flour, then fold it in 6 turns, rolling to 1/4-inch again and refrigerating for 30 minutes between each two or three turns.
- Once the dough is ready, roll it again to 1/4-inch thickness if it is too thick.
- Preheat the oven to 400°F.
- Cut the dough into squares or rectangles with a pizza cutter, or into circles with a cookie cutter.
- Arrange the shapes on a floured baking tray and bake for 12 to 15 minutes, flipping them after 8 minutes.
- Lower the oven to 170°F and bake for another 60 minutes for crunchy biscuits.
