Ingredients

Instructions

  1. In a mixing bowl, combine the rice flour and tapioca starch, mixing with your hand just until combined.
  2. Add a little water at a time, mixing until a soft dough forms, then knead for about 5 minutes.
  3. Add the remaining water and work the dough into a smooth batter. Let it rest while you prepare the steamer.
  4. Preheat the steamer and bring the water to a full boil. Oil the pan with oiled folded paper towel, including the sides and corners, and oil the plate for the cooked sheets. Optionally, prepare an ice bath.
  5. When the water boils, place the pan in the steamer. Stir the batter well, pour in the amount needed for one sheet, and jiggle the pan so the batter covers it. Cover and steam for 1 minute.
  6. Remove the pan. Cool it completely in an ice bath, or once it is cool enough to handle, rinse the back under cold tap water for 10-15 seconds.
  7. When fully cool, run a rubber spatula around the edges, then gently peel the sheet off and place it on the oiled plate.
  8. Repeat with the remaining batter, oiling the pan and stirring the batter each time. Scrub off heavy residue with a dish brush, but leave small spots. Stack the sheets with any thick edges on the same side.
  9. Cut the stacked noodles into strips about 3/4 inch (2 cm) wide and use right away, or store as the blog post describes.
