Homemade Shortbread Cookies
Ingredients
- Butter1 cup
- Flour2 cups
- Sugar½ cups
- Salt½ tsp
Instructions
- Preheat the oven to 350°F (180°C). Grease a baking tray or line it with parchment and set aside.
- Beat the room-temperature butter and sugar together with a fork or wooden spoon until well combined.
- Add half the flour and the salt and mix; the mixture will be very crumbly.
- Add the remaining flour and work it with your hand into a ball of dough.
- Wrap the dough in plastic wrap and shape it into a rectangle about half an inch (1.25 cm) thick.
- Chill the dough in the fridge for about 30 minutes; meanwhile, preheat the oven to 350°F (180°C).
- Unwrap the dough, roll it to about 1/4 inch (6 mm) thick, leaving the plastic wrap on while rolling.
- Remove the wrap and cut the dough into rectangles, or into shapes with a cookie cutter.
- Place the pieces on parchment-lined trays and prick each a couple of times with a fork.
- Bake for about 10 minutes until light golden.
