Homemade Soft Breadsticks (Like Olive Garden!)
Ingredients
- Yeast2
- Sugar2 tbsp
- Butter · melted5 tbsp
- Salt1 + ¼ tsp
- Bread flour3
- Garlic powder¾ tsp
- Parsley · dried
Instructions
- Whisk the warm water, yeast and sugar together in a large bowl (or a stand mixer bowl). Cover loosely and let sit 5–10 minutes until foamy.
- Add the melted butter, salt, 1 cup (130g) of the bread flour and the garlic powder. Mix on low for 30 seconds, scrape the sides, then add the remaining flour and beat on medium for about 2 minutes until the dough pulls away from the sides. If too wet, add more flour 1 tablespoon at a time.
- Knead the dough for 8–10 minutes, by machine with the dough hook or by hand on a lightly floured surface. If sticky, add 1 teaspoon of flour at a time. The dough should be soft and slightly tacky; poke it and it should slowly bounce back.
- Lightly oil a large bowl, add the dough and turn to coat. Cover and let rise in a warm place for 1.5–2 hours, until doubled.
- Line 2 baking sheets with parchment or silicone mats.
- Punch down the dough and divide it in half. Cut each half into 7 roughly equal pieces (about 55g each). Roll each piece into a log about 20 cm (8 inches) long. Place 7 on each baking sheet.
- Cover the shaped breadsticks and let rise until slightly puffy, about 20 minutes.
- Meanwhile, preheat the oven to 400°F (204°C).
- Bake for 18–19 minutes, until golden brown on top, rotating the pans halfway through. If the tops brown too fast, loosely tent with foil.
- Melt the 2 tablespoons (28g) butter and stir in the 1/4 teaspoon salt and 1/4 teaspoon garlic powder.
- Brush the hot breadsticks with the garlic butter, cool a couple of minutes, sprinkle with dried parsley or another herb if you like, and serve warm.
