  1. Steam the root vegetables (potato, sweet potato, carrot, beetroot) in a pressure cooker if possible.
  2. In a wide nonstick pan, heat the olive oil. Add ginger paste, garlic paste, green chili paste, chopped onion, turmeric, red and green bell pepper, chopped spring onion, corn and green beans, and cook well.
  3. Stir in the split yellow mustard to taste and cook briefly.
  4. Add garam masala, salt to taste and lemon juice.
  5. Take the boiled vegetables out of the pressure cooker and add them to the sautéed vegetables. Mix.
  6. Mash everything together with a potato masher and let the mixture cool.
  7. Soak 4 slices of bread lightly in water, squeeze out the water, mash them and mix into the mixture.
  8. Mix well by hand, then shape into patties of the desired size, greasing your palms with a little oil.
  9. Heat a large griddle and brown the patties until cooked through.
  10. Assemble each burger: place a patty between the buns with a lettuce leaf.
  11. Serve with spicy and tangy chutneys and sauce.
