Homemade Version of Cruffins
Ingredients
- Milk1 cup
- Yeast2
- Sugar3 tbsp + ¾ cups
- Butter · softened3 tbsp + 1 cup
- Flour3 cups + 1 tbsp
- Salt1
- Cinnamon · ground1 tbsp
- Chocolate spread
Instructions
- Warm the milk to about 110°F (43°C). Whisk it with the yeast and sugar in a stand mixer bowl fitted with a dough hook, then let it sit about 5 minutes until foamy.
- Add the 3 Tbsp butter, 2 cups (250g) flour and the salt. Beat on medium for 2 minutes, scraping the bowl as needed. Add the remaining 1 cup (125g) flour and beat on low until a soft dough forms that pulls away from the sides. If it is very sticky, beat in up to 2 more Tbsp flour.
- Knead the dough in the mixer for 5 full minutes, or by hand on a lightly floured surface. If it gets sticky, add 1 tsp flour at a time. The dough should still feel a little soft and spring back slowly when poked. It is ready when a small golf-ball-sized piece can be stretched thin enough for light to pass through without tearing.
- Grease a large bowl, add the dough and turn to coat. Cover tightly and let it rise in a fairly warm place for about 2 hours, until nearly doubled.
- Gently punch down the dough. On a lightly floured silicone mat or parchment-lined sheet, stretch it into a 10×14-inch (25×36cm) rectangle without tearing. Cover and refrigerate for exactly 20 minutes.
- Beat the 1 cup (226g) butter, slightly softened but still cool at 60–64°F (15–18°C), with 1 Tbsp flour until fully combined.
- Take the dough out. With the long side facing you, spread the butter over the centre third, fold one side over, then the other like a business letter, and pinch the short ends shut. Rotate so the long edge faces you, flour the top, and roll to a 9×12-inch (23×30cm) rectangle. Fold like a letter, cover and chill 20 minutes.
- Roll out to 9×12 inches again, fold like a letter, rotate, roll and fold once more. Cover and chill 20 minutes.
- Roll out to 9×12 inches, fold like a letter, rotate, roll and fold again. Cover and chill 20 minutes.
- Lightly grease a standard 12-cup muffin pan. Then, in a medium bowl, mix the 3/4 cup (150g) sugar and 1 Tbsp cinnamon for the topping.
