- Chili pepper · finely chopped1–3
- Garlic · finely chopped5
- Sesame oil1 ½ tbsp
- Chicken thigh4
- Vegetable oil2 tbsp

Instructions
- In a bowl, combine the marinade ingredients with the chicken thighs, rubbing it into each one. Refrigerate for 1 hour.
- Scrape off excess marinade. Heat the vegetable oil in a 12 to 14 inch pan over medium heat, then fry the chicken skin-side down for 2 to 3 minutes until golden but not fully cooked. Set aside to cool.
- Remove any burnt bits from the pan and return the chicken to it, skin-side up. Add the onion, coconut water and leftover marinade, cover, and cook over low heat for 25 minutes.
- Remove the lid and turn the heat to high. Drizzle the honey over the chicken and turn the thighs often, watching closely, until the liquid turns syrupy and the chicken is evenly golden.
- Optional: broil for 2 minutes for crispier skin.
