Honey Garlic Chicken Skewers

Ingredients

Instructions

  1. Mix the marinade ingredients in a small bowl: oil, sesame oil, minced garlic, minced ginger, dark soy sauce and honey.
  2. Put the chicken in a bowl, pour over three-quarters of the marinade and keep the rest for brushing. Cover and refrigerate for 1 hour, or up to a day.
  3. If using wooden skewers, soak them first; otherwise use metal skewers.
  4. Heat the BBQ or griddle until very hot.
  5. Thread chicken onto a skewer, then a chunk of red pepper, then another piece of chicken and a slice of onion. Repeat until the skewers and chicken are used up. Discard the marinade left in the bowl.
  6. Cook the skewers for 8-10 minutes until cooked through, turning them 3-4 times and brushing with the reserved marinade halfway through.
  7. Check the chicken is done by cutting open the largest piece: there should be no pink in the middle.
  8. Sprinkle with sesame seeds and coriander.
