Honey Glazed Halloumi
Ingredients
- Halloumi cheese600 g
- Honey5 tbsp
- Lemon1
- Thyme4 sprigs
- Olive oil2–3 tbsp
Instructions
- Slice the halloumi into 1 cm thick pieces.
- In a small bowl, mix the honey, the juice of the lemon and the thyme leaves well.
- In an airtight container, layer halloumi slices, spooning a little of the honey-lemon dressing over each layer, and repeat until all the cheese is used. Pour over any leftover dressing.
- Refrigerate to marinate for at least 1 hour; overnight is best, and a few hours is fine. Now and then turn the container upside down so the dressing coats all sides.
- Heat some of the olive oil in a pan over medium heat. Add some halloumi without crowding the pan or letting pieces touch.
- After 2–3 minutes, when well seared, turn the cheese. After 1 minute, spoon a few spoonfuls of dressing over it to glaze. When the second side is seared, transfer to a plate.
- Repeat until all the cheese is cooked. Just before serving, spoon more dressing over the cheese to coat it.
