Hot Buttered Corn Rice
Ingredients
- Butter50 g
- Garlic3
- Sweet corn · frozen2 cups
- Salt¼ tsp
- Pinch of pepper
- Rice1 cup
- Chicken stock1 ½ cups
- Scallion2
Instructions
- Use a small pot or large saucepan about 20–22 cm (8–9 inches) wide.
- Melt half the butter in the pot over high heat. Add the garlic and stir for 15 seconds. Add the corn and half the salt and stir for 2 minutes.
- Add the rice and stir for 30 seconds. Add the stock, the remaining salt and the pepper. Stir and bring to a simmer until the whole surface bubbles. Cover, then turn the heat to medium-low (or low if your stove runs hot).
- Cook for 12 minutes without lifting the lid or stirring. The liquid should be absorbed; tilt the pot and check quickly.
- Take the pot off the heat and let it rest, covered, for 10 minutes.
- Lift the lid, add the remaining butter and fluff the rice to melt it through. Stir in the green onion and serve hot.
