Hot Chocolate Fudge Cake
Ingredients
- Flour1 cup
- Cocoa powder⅓ cups
- Baking powder¾ tsp
- Baking soda¾ tsp
- Sugar1 cup
- Salt¼ tsp
- Egg1
- Milk½ cups
- Butter75 g
- Oil1 tbsp
- Vanilla1 tsp
- Heavy cream1 cup
- Dark chocolate1 ¼ cups
- Ice cream
Instructions
- Preheat oven to 180°C/350°F (160°C fan). Grease a 20 cm/8 inch cake pan with butter and line it with paper.
- Whisk the dry ingredients together in a large bowl.
- Whisk in all the wet ingredients except the boiling water until combined, then add the boiling water and whisk until smooth. The batter will be thin.
- Pour into the pan and bake for 40 minutes, or until a skewer inserted into the centre comes out mostly clean (a faint smear of batter is fine).
- Cool in the pan for 10 minutes. Invert onto a plate, then turn right side up onto a rack or plate and cool for a further 10 minutes.
- For the sauce: heat the cream until hot, just below boiling point.
- Put the chocolate in a bowl, pour over the hot cream, make sure all the chocolate is submerged, cover with a plate and leave for 5 minutes.
- Whisk or stir vigorously until smooth and silky, then cool for 20 minutes to thicken, stir again and serve.
