Ingredients

Instructions

  1. In a medium saucepan, bring 1/2 cup water, 1/2 cup milk, 8 tablespoons butter, 1 teaspoon sugar and 1/4 teaspoon salt to a boil over medium heat, stirring often.
  2. Take off the heat and immediately stir in 1 cup flour all at once with a wooden spoon. Return to the heat and stir constantly for 2 more minutes until a smooth ball forms and a thin film coats the bottom of the pan.
  3. Move the dough to a large bowl and beat on medium speed for 2 minutes to cool it slightly. Add the 4 cold eggs one at a time, beating each in fully before adding the next. Beat until smooth and the dough falls from the beaters in a thick ribbon.
  4. Heat 2 inches of vegetable or canola oil to 370°F. Keep it between 350°F and 370°F while frying.
  5. In a shallow bowl, mix 1/2 cup sugar with 1 teaspoon cinnamon.
  6. Pipe 6-inch lengths of dough into the hot oil through a large star tip, cutting them off with scissors. Fry 1½ minutes per side until golden, flipping with tongs, then fry for another 1½ minutes. Work in batches of 5-6.
  7. Drain on a paper towel-lined plate, then roll the warm churros in the cinnamon sugar.
