Ingredients

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. In a large bowl, combine the wholemeal self-raising flour, cinnamon, mixed spice, coconut sugar, sultanas and a pinch of sea salt.
  3. Add the Greek yoghurt and mix with a spoon.
  4. Dust a work surface with flour, turn the dough out and knead by hand for about 5 minutes, adding a little more flour if too wet. The dough should be slightly tacky but not stick to your fingers.
  5. Roll into a ball and divide into 4 equal pieces. Roll each piece into a thick rope and join the ends to form a bagel shape.
  6. Whisk the plain flour and water into a thick paste. Add more water if too dry, or more flour if too wet.
  7. Pipe a cross of paste onto each bagel, using a piping bag or a bag with a small corner snipped off.
  8. Bake on a lined tray on the top rack for 20–25 minutes, until dark brown.
  9. Heat the honey or maple syrup until runny, brush a thin layer over each bagel and rest on a rack for 10 minutes.
  10. Slice in half and serve with butter.
