- Oil for frying2 tbsp
- Shallot · minced2
- Tomato paste2 tbsp
- Tomato · crushed1
- Mozzarella cheese · shredded1 cup
- Parmesan cheese · grated½ cups
- Bread
- Green Salad

Instructions
- Season the chicken on both sides with salt and pepper. Set out three bowls: flour, beaten egg, and panko mixed with breadcrumbs. Stir a pinch of salt into each bowl.
- Coat the chicken in flour, shaking off the excess, then dip into the egg, and finally press into the panko and breadcrumb mix.
- Pour 1 to 2 inches of oil into a wide skillet and heat. Fry the chicken a few minutes per side until golden brown and it reaches 165°F inside.
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the shallots and sauté 3 to 4 minutes. Add the tomato paste and sauté another 3 to 4 minutes. Add the crushed tomatoes and 1 teaspoon salt and simmer for 15 to 20 minutes.
- Set the broiler to high. Put 3/4 cup of the sauce in a small oven-safe pan. Spread 2 to 3 tablespoons of mozzarella in an even layer in the centre, then sprinkle with a little Parmesan. Broil 4 to 5 minutes near the top of the oven, until the cheese is deep golden and bubbling.
- Carefully tilt the hot pan so the sauce and melted cheese slide over the chicken on a plate.
