House Favorite Cinnamon Rolls with Cream Cheese Glaze
Ingredients
- Yeast1 tsp
- Salt1 tsp
- Butter · melted, softened13 tbsp
- Egg2
- Honey3 tbsp
- Flour2 ½ cups
- Sugar5 tbsp + ⅓ cups
- Brown sugar5 tbsp
- Cinnamon1 tsp
- Cream cheese · softened2 oz
- Milk2 tbsp
- Vanilla¼ tsp
Instructions
- Put the lukewarm water and yeast in a bowl. Melt the butter, then whisk in the honey, egg and salt.
- Add the butter mixture to the bowl, then add the flour and mix with a wooden spoon until combined. The dough will be messy, sticky and loose.
- Cover loosely and let it rise at room temperature for 1-2 hours, until roughly doubled. To speed this up, you can place the bowl near the fan of an oven set to 200°F...
- Once doubled, pull the sticky dough from the edges of the bowl with your hand so it partly deflates. Cover and refrigerate for at least 3 hours, up to 5 days.
- Take the dough out of the fridge, lightly flour the outside and roll it into about a 9×13 rectangle, working quickly.
- Brush the rectangle with the 3 tablespoons melted butter, then sprinkle with the white sugar, brown sugar and cinnamon.
- Roll up from the short side, trim the ends, and cut the log into 8 equal rolls. Place them in a 9-10 inch round pan.
- Preheat the oven to 200 degrees, turn it off, cover the pan loosely and let the rolls rest in the oven for 45 minutes. Then turn the oven to 350 degrees and bake for 20-22 minutes.
- Beat the cream cheese and 2 tablespoons softened butter until smooth. Add the powdered sugar, vanilla, salt and milk a little at a time, then beat until light and fluffy.
- Let the rolls cool a minute, then spread or spoon the frosting over them. Add a second layer once they have cooled a bit more.
