Instructions

  1. Debone the chicken breast by cutting a shallow line around the bone and along it. Trim off the hard bones and cartilage and save them for stock.
  2. Cut a slit through the thickest parts on the meat side, then lightly slice diagonally across the whole breast in the opposite direction.
  3. Rinse the chicken and pat it dry with paper towels.
  4. Mix the garlic salt, fish sauce, oyster sauce, light soy sauce, sugar, cooking wine, cornstarch and white pepper in a small bowl. Taste and adjust.
  5. Spoon the marinade onto the meat side, pushing it into the cuts. Marinate for at least 30 minutes.
  6. Mix the oyster sauce, light soy sauce, hoisin sauce and boiling water in a small bowl until smooth. Add chili sauce if you want heat.
  7. Line the air fryer tray with foil, shiny side up, and poke holes in it for ventilation.
  8. Place the chicken meat side up on the tray. Air fry at 375Β°F for 11 to 12 minutes.
  9. Turn the chicken skin side up. Sprinkle on the 0.5 teaspoon salt, brush on the 0.5 teaspoon oil, then sprinkle on the 0.5 teaspoon cornstarch and spread it evenly over the skin.
  10. Return to the air fryer for another 11 to 12 minutes. Check the skin; for crispier, darker golden skin, cook 3 to 5 minutes more.
  11. Remove, plate, and cut before serving or at the table.
