Ingredients

Instructions

  1. Soak the bok choy in a large bowl of water for 10 minutes.
  2. Tear off the outer leaves, rinse off the dirt, swishing the stem end up to loosen debris, then drain stem side up.
  3. Remove the silver skin from the flank steak, then slice against the grain at an angle into 1/4-inch pieces. Rinse the slices in cold water for 2 minutes, then drain.
  4. Mix the oyster sauce, light soy sauce, rice wine, water, white pepper, sugar, baking soda and cornstarch into a marinade. Squeeze the beef dry, add the marinade and mix lightly for 2 minutes, then set aside.
  5. Crush, peel and mince the garlic. Slice the ginger into 1/4-inch slices, then cut into quarters. Cut the carrot into 1/4-inch slices. Halve the green onion whites. Quarter or halve the bok choy so it cooks quickly.
  6. Mix the oyster sauce, light soy sauce, dark soy sauce, rice wine, sugar, white pepper and chicken bouillon into a sauce. Mix the cornstarch and water into a slurry.
  7. Add 1 tablespoon oil to the marinated beef and stir to combine.
  8. Heat a wok on high with 2 tablespoons oil. When it smokes, lower to medium, add half the garlic and stir-fry for 30 seconds. Add the bok choy and stir-fry for 1 to 2 minutes. Add the cooking wine and stir-fry for 20 seconds, then add 2 tablespoons water (plus 1 more if needed). Cover and steam on low for 40 to 50 seconds.
  9. Uncover, toss the bok choy, add the sugar and salt and stir-fry to combine. Turn off the heat, drain the bok choy and set aside. Rinse the wok.
  10. Heat the clean wok on high with 1 tablespoon oil. When it smokes, lower the heat and add the ginger, carrot, green onion whites and remaining garlic. Stir-fry for 1 minute.
  11. Raise to medium, add the marinated beef and spread the pieces out with chopsticks. After 1 minute, flip and stir the beef. Lower the heat and pour in the sauce. Stir-fry to combine, adding the cornstarch slurry if it needs more sauce.
  12. Add the bok choy and stir-fry together for 30 seconds. Add the sesame oil.
  13. Lay the bok choy on the bottom of the serving plate and spoon the stir-fry over it.
