๐ How a Chinese Chef cooks Costco Tilapia! (็ ้ฏฝ้ญ)
Ingredients
- Snow pea3 oz
- Tilapia18 oz
- White pepper1 tsp
- Garlic1 tbsp
- Cornstarch1 tbsp
- Oil6 ยฝ tsp
- Shaoxing wine1 tsp
Instructions
- Pull the string off each snow pea along its edge, then discard the strings.
- Pat the tilapia dry if needed. Season both sides of the fillets with white pepper and garlic salt, pressing the seasoning into the fish.
- Coat both sides of the fillets with cornstarch, pressing it into the fish.
- Bring a small pot of water to a boil. Add the oil, then blanch the snow peas for 30 to 40 seconds.
- Drain the snow peas.
- Heat a non-stick-free pan on high for 1 to 2 minutes, until slightly smoking. Lower the heat to medium and add the oil, using plenty so the fish does not stick and forms a good crust.
- Add the tilapia gently and pan-fry for 2.5 to 3 minutes without moving it right away, then move it slightly with chopsticks or a spatula.
- Press down on the fish, flip the fillets and pan-fry for 2.5 to 3 minutes, tilting the pan so the oil spreads.
- Pour the cooking wine around the edge of the pan, turn off the heat and cover for 30 to 40 seconds.
- Turn the heat back to medium and pan-fry for 30 to 40 seconds, until the liquid has evaporated.
- Turn off the heat. Put half the snow peas on the plate, top with the tilapia, and arrange the rest of the snow peas around the side.
