- Shiitake mushroom · dried2 oz
- Carrot½
- Napa cabbage4 oz
- Celery3 stalks
- Red onion2 oz
- Scallion2 oz
- Garlic3 cloves
- Corn oil1 tbsp
- Salt½ tsp
- Sugar1 tsp
- Soy sauce1 tbsp
- Oyster sauce1 tbsp
- Dark soy sauce1 tsp
- Sesame oil1 tsp
Instructions
- Soak the mung bean vermicelli in warm water for a few minutes.
- Rinse the dried shrimp in warm water, drain, then soak them in fresh water for 3 minutes. Squeeze out excess water and set aside the soaking liquid.
- Wash the dried shiitake in cold water, then soak them in warm water. Drain, squeeze out excess water and slice thinly.
- Peel the carrot, cut a thin slice off one side to make a flat base, then slice into thin planks, stack them and cut into thin matchsticks.
- Cut 4 napa cabbage leaves off at the base, rinse and soak them with the celery in a large bowl. Slice the cabbage into three sections, then cut into thin strips.
- Separate the red onion into pieces from the root end, then slice thinly across the grain. Cut the green onion into 2-inch pieces, keeping whites and greens separate.
- Smash the garlic cloves with the flat of a knife, trim the hard ends and mince. Quarter the celery stalks, then cut into strips along the grain.
- Snip the vermicelli a few times with kitchen shears so the strands are shorter, then drain.
- Heat a wok on high, add 1 tablespoon corn oil, then lower the heat. Stir-fry the garlic for 20 seconds, then add the shrimp and move them around with chopsticks.
- Add the mushrooms and stir-fry for 2 minutes. Add the green onion whites and the cabbage, raise the heat to high and stir-fry for 2 to 3 minutes.
- Add the celery and stir-fry for 1 minute, then add the carrot and stir-fry for 1 minute. Pour in 2 to 3 tablespoons of the reserved shrimp water and stir-fry for another minute.
- Lower the heat. Stir in 1/2 teaspoon salt, 1 teaspoon sugar, 1 tablespoon light soy sauce and 1 tablespoon oyster sauce, then add 1 teaspoon dark soy sauce.
- Add the noodles to the centre of the wok, raise the heat to high and toss them in the sauce, separating the strands with chopsticks.
- Add the red onion and remaining green onion, then stir-fry on medium-low heat for a final 2 minutes.
- Taste and adjust seasoning, then finish with 1 teaspoon sesame oil.
