- Cod2 lb
- Salt1 tsp

Instructions
- Mince the garlic finely, peeling and removing the root ends first.
- Crush the ginger, then mince it finely. Mince the scallions until as fine as the garlic and ginger.
- In a small bowl, combine the garlic salt, sugar, white pepper, cornstarch and cooking wine, then stir in the minced aromatics.
- In another small bowl, mix the light soy sauce, dark soy sauce, rice vinegar, sugar and chili sauce if using.
- Pat the cod dry with paper towel, then coat the fillets evenly with the aromatic paste in a large bowl.
- Add 1 tablespoon oil to the marinated cod.
- Air fryer: line the basket with foil, drizzle with 1 teaspoon oil, arrange the cod in a single layer (in batches if needed), and top with any extra paste.
- Air fryer: cook at 375°F for 12 minutes, removing after 6 minutes to drizzle with 1 teaspoon oil, then raise the temperature to 380°F for the final cooking. Cook until the internal temperature reaches 130-135°F for medium, or 145°F per USDA guidance.
- Toaster oven: preheat to 425°F. Line the tray with foil, drizzle with 1 teaspoon oil, arrange the cod, and top with any extra paste.
- Toaster oven: bake on the lower rack for 15 minutes, then move to the higher rack for 5 more minutes until the top is crispy.
- Bring 4 cups of water to a boil in a large pot over high heat with the remaining 1 teaspoon oil and salt. Add the broccoli, lower to medium and simmer for 5-6 minutes, then drain.
- Plate the cod with the broccoli and finish with a drizzle of oil.
