Modo de preparo

  1. Mince the garlic finely, peeling and removing the root ends first.
  2. Crush the ginger, then mince it finely. Mince the scallions until as fine as the garlic and ginger.
  3. In a small bowl, combine the garlic salt, sugar, white pepper, cornstarch and cooking wine, then stir in the minced aromatics.
  4. In another small bowl, mix the light soy sauce, dark soy sauce, rice vinegar, sugar and chili sauce if using.
  5. Pat the cod dry with paper towel, then coat the fillets evenly with the aromatic paste in a large bowl.
  6. Add 1 tablespoon oil to the marinated cod.
  7. Air fryer: line the basket with foil, drizzle with 1 teaspoon oil, arrange the cod in a single layer (in batches if needed), and top with any extra paste.
  8. Air fryer: cook at 375°F for 12 minutes, removing after 6 minutes to drizzle with 1 teaspoon oil, then raise the temperature to 380°F for the final cooking. Cook until the internal temperature reaches 130-135°F for medium, or 145°F per USDA guidance.
  9. Toaster oven: preheat to 425°F. Line the tray with foil, drizzle with 1 teaspoon oil, arrange the cod, and top with any extra paste.
  10. Toaster oven: bake on the lower rack for 15 minutes, then move to the higher rack for 5 more minutes until the top is crispy.
  11. Bring 4 cups of water to a boil in a large pot over high heat with the remaining 1 teaspoon oil and salt. Add the broccoli, lower to medium and simmer for 5-6 minutes, then drain.
  12. Plate the cod with the broccoli and finish with a drizzle of oil.
