Instructions
- Cut the red bell pepper into thin strips, and cut the red chili in half, remove the pith and seeds, and slice into thin strips. Smash, peel and mince the garlic. Cut the stems off the dried chilies.
- Mix the flour, cornstarch, baking powder and salt in a bowl. Slowly add the water a few tablespoons at a time until the batter is loose but not thin. Beat half the egg into the batter, then add the oil and mix well.
- Cut the chicken into 1-inch cubes. Put it in a bowl, then add the cornstarch, salt, chicken bouillon powder, white pepper, oyster sauce, water and half the beaten egg, and mix thoroughly.
- Mix the light soy sauce, oyster sauce, dark soy sauce, rice vinegar, sugar and water in a small bowl and taste; it should be balanced sweet and sour.
- Combine the potato starch and water to make a slurry and set aside.
- Bring water to a boil with the oil and salt. Add the broccoli and cook 30 to 40 seconds, then move it to cold water to stop cooking.
- Toast the white sesame seeds in a wok on low heat, stirring constantly, until golden brown, then set aside.
- Heat the corn oil in the wok on high to 325ยฐF. Coat the chicken with the batter. Lower the heat slightly and fry the chicken one piece at a time, then after 1.5 minutes stir, and fry for 2.5 minutes total. Remove and set aside.
- Bring the oil to 370ยฐF and fry the chicken again in batches for 40 to 50 seconds each. Keep the oil at 370ยฐF between batches.
- Turn off the heat and pour out the oil, then wipe the wok clean if reusing it.
- Add oil to the wok and heat on medium for 10 to 20 seconds. Stir-fry the garlic and dried chilies for 30 to 40 seconds until fragrant.
- Pour in the sauce and stir for 30 to 40 seconds, then taste and adjust.
- Lower the heat, add the slurry a little at a time while stirring, and cook for about 1 minute until it thickens to your liking, adding more slurry or water if needed. Turn off the heat and stir in the sesame oil.
- With the heat off, add the fried chicken, bell pepper and red chili and toss. Mix in some sesame seeds, saving some for garnish.
- Transfer to a large plate, sprinkle with the reserved sesame seeds and serve with the broccoli on the side.
