Instructions

  1. Rinse the dried shiitake twice, then soak in warm water for 15 to 20 minutes, weighing them down with a bowl if they float. Drain, rinse once more and set aside.
  2. Rinse the cloud ear fungus, soak in warm water for 10 to 15 minutes, drain, then soak in clean warm water for 5 more minutes. Drain and set aside.
  3. Rinse the goji berries and soak them in room-temperature water for 10 to 15 minutes. Drain and set aside.
  4. Rinse the Chinese sausage and set aside.
  5. Remove the skin from the drumsticks if using them (skip for boneless, skinless cuts). Debone the chicken, breaking the bone with the cleaver's back and pulling the meat off; save the bones for stock. Trim off any connected parts and cut the meat into 1/4-inch chunks.
  6. Slice the ginger, peel and quarter the slices, and add them to the chicken. Add 1 tablespoon cooking wine, mix by hand and rest 8 to 10 minutes.
  7. Cut the sausage on the diagonal into 1/4-inch slices. Cut the white shallot parts into 2-inch segments and dice the green parts for garnish.
  8. Peel the remaining ginger, slice it thinly, then cut into quarters.
  9. Whisk the oyster sauce, light soy sauce, sugar, salt, white pepper, 2 teaspoons cooking wine and cornstarch in a small bowl. Taste and adjust.
  10. Add the marinade to the chicken gradually (you need not use all of it), mixing by hand. Add the sesame oil, then the rehydrated mushrooms and cloud ear, then the oil, and finally the ginger and shallot segments, mixing after each addition.
  11. Spread the cloud ear on the bottom of a steaming plate, add the chicken mixture on top, leaving a slight dip in the centre. Arrange the sausage slices evenly over it, then scatter the goji berries evenly on top.
  12. Bring water to a boil on high in a wide wok fitted with a steaming rack (you may boil the water separately and add it first). Once boiling, set the plate on the rack, cover and steam on high for 14 to 15 minutes, adjusting for plate depth and width, water amount and wok size.
  13. Sprinkle the diced shallot greens over the dish, remove the plate from the wok and serve.
