🤤 How Chinese OGs like their Beef Chow Fun (濕炒牛河)
Ingredients
- Fresh chow fun1 lb
- Beef10 oz
- Bell pepper1 oz
- Onion2 oz
- Black bean½ oz
- Garlic3 cloves
- Oil5 tbsp
- Soy sauce6 tsp
- Salt1 tsp
- Sugar1 tsp
- White pepper0.55 tsp
- Oyster sauce2 tbsp
- Cornstarch1 tbsp
- Potato starch1 tsp
- Ginger1
Instructions
- Slice the beef 1/4 inch thick across the grain, then soak the slices in cold water. Drain and squeeze out as much water as you gently can.
- Rinse the fermented black beans, then soak them in cold water until soft. Drain, rinse once more and crush into a rough paste.
- Cut the yellow onion into large triangle-and-rectangle chunks. Cut the green and red bell peppers into medium triangles of about the same size.
- Mince the garlic. Thinly slice the ginger into strips, then finely mince it.
- Marinate the beef with the salt, sugar, white pepper, 1 tbsp light soy sauce, 1/2 tsp dark soy sauce, 1 tbsp oyster sauce, 1 tbsp cornstarch and 2 tbsp water, massaging until well coated. Add 1 tbsp oil and mix in.
- Mix the sauce in a separate bowl with 1 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tbsp oyster sauce, 3 tbsp water, 0.3 tsp white pepper, 0.5 tsp salt, 0.5 tsp sugar and 1 tsp potato starch, stirring to dissolve.
- Loosen the fresh chow fun strands by hand on a dry surface until separated, then set them on a plate.
- Heat a dry wok on high, add a little oil and swirl. Lower to medium or low, add the noodles and spread them out. Stir-fry without moving them much for about 1 minute.
- Flip the noodles and fry the other side for 30 to 40 seconds. Season with 1 tsp light soy sauce, stirring gently, lowering the heat if needed. Plate the noodles and tease apart any clumps.
- Reheat the wok, add oil and the beef, and lower the heat. Fry gently for about 1 minute, until 60-70% cooked. Remove to a strainer to drain off excess oil.
- Pour out the oil from the wok, leaving a thin residue on the walls. Reheat the wok, add the garlic and ginger and stir-fry for about 10 seconds until fragrant.
- Add the crushed black beans and fry until aromatic. Rinse the bowl with about 1 tbsp water and add that to the wok.
- After 20-30 seconds, add the onion and bell peppers, stir-fry, then add the rinsing water and toss to combine.
