How I Learned to Make Moroccan Chicken Tagine Recipe
Ingredients
- Chicken thigh · trimmed1 ¾ lb
- Olive oil2 tbsp
- Red onion · diced1
- Garlic · minced diced4 cloves
- The Fit Cook Everyday Blend1 tbsp
- Turmeric1 tbsp
- Cumin2 tsp
- Ginger powder1 tsp
- Cilantro · finely chopped½ cups
- Parsley · finely chopped½ cups
- Salt
- Black pepper
- Lemon · chopped1
- Potato · peeled chopped2
- Squash · cubed or chopped1 cup
- Zucchini · sliced2
- Olive · pitted½ cups
Instructions
- Put all the chicken ingredients in the tagine or Dutch oven without heating it yet. Rub the chicken well with the seasoning and onions, making sure it touches the bottom of the pot.
- Place over medium-high heat and cook uncovered for about 10 minutes, turning the chicken or lowering the heat if it cooks too fast.
- After 10 minutes, arrange the vegetables on top of the chicken in a pyramid, with the slowest-cooking ones (potato and squash) at the bottom, then zucchini and olives.
- Top with cilantro, parsley, a generous pinch of salt and pepper. Squeeze the juice of half a lemon over everything, then place the squeezed half on top.
- Cover and cook on low-medium heat for 20–25 minutes, until the vegetables are cooked through and crisp-tender.
