How I Make Creamy Stovetop Mac and Cheese - Easy Thanksgiving Side
Ingredients
- Macaroni pasta1 lb
- Milk1 ¼ cups
- Cheddar cheese · shredded4 cups
- Pecorino cheese · grated½ cups
- Sodium citrate1 tbsp
- Mustard powder1 tsp
- Salt
- Black pepper
Instructions
- Boil the macaroni in a large pot of salted water until al dente. Reserve 1 cup of the pasta water, then drain.
- Combine the milk, water and sodium citrate in a large pot and bring to a simmer.
- Add the cheddar to the simmering liquid slowly, 1-2 tablespoons at a time, stirring until each addition melts in. Keep going until the sauce is completely smooth; use an immersion blender if needed.
- Stir in the mustard powder, then taste and season with salt and pepper.
- Toss the pasta with half the cheese sauce, then add more sauce until it reaches the desired consistency. If it is too thick, loosen it with a little of the reserved pasta water.
- Taste once more, adjust the seasoning, and serve right away.
