How I Make Easy Delicious Shrimp and Grits
Ingredients
- Cornmeal2 ½ cups
- Milk2 ½ cups
- Salt1 tsp
- Cheddar cheese · shredded1 ½ cups
- Butter5 tbsp
- Shrimp1 ½ lb
- Baking soda½ tsp
- Cajun seasoning2 tsp
- Bacon6 slices
- Garlic5 cloves
- Celery1
- Onion1
- Bell pepper½
- Flour1 tbsp
- Chicken stock¾ cups
- Scallion5
- Lemon1 tbsp
Instructions
- Bring the water and milk to a low boil in a deep pot.
- Whisk in the grits once boiling and stir often. When they start splattering, lower the heat to low and cover, leaving the lid partly open.
- Keep cooking at moderate heat, stirring now and then and wiping down the pot sides, until smooth and creamy (about 30 minutes).
- Stir in the cheddar, salt and butter.
- While the grits cook, toss the shrimp with the baking soda and Cajun seasoning in a bowl and set aside.
- Cook the bacon in a large pan over medium heat until crisp (about 7-10 minutes), then move it to a paper-towel-lined plate.
- Raise the heat to just above medium. Cook the shrimp 60-90 seconds per side until almost cooked through, then put them on a plate and cover loosely with foil.
- In the same pan, soften the butter, bell pepper, celery and onion (about 5 minutes), then add the garlic and cook 1 more minute. Stir in the flour until no white spots remain.
- Add the stock, raise the heat to high and boil while scraping up the brown bits with a wooden spoon. Reduce until the sauce is about half the original amount.
- Lower the heat to medium, return the shrimp and bacon to the pan and heat until the shrimp are hot (about 2 minutes). Take off the heat.
- Stir in the lemon juice and green onions. Spoon the grits into bowls and top with the shrimp mixture.
