Ingredients

Instructions

  1. Peel the shrimp, then devein them by slicing down the back and removing the vein (or skip this if pre-peeled).
  2. Season the shrimp with white pepper and salt, then mix in cornstarch.
  3. String the snow peas on both sides and wash them in water for 5-10 minutes, then drain and dry.
  4. Cut the celery and carrot into thin strips and diamond slices; cut the green onions into inch-long pieces; slice the ginger and garlic; trim the seafood mushrooms.
  5. Mix together the salt, sugar, cornstarch, cooking wine, white pepper, fish sauce and water for the sauce.
  6. Bring water to a rolling boil in a wok over high heat with salt and oil. Blanch the celery and carrot for 30-40 seconds, then the snow peas for 30 seconds, then add the mushrooms.
  7. Drain the vegetables while still bright in colour.
  8. Heat the wok on high for 40-50 seconds, add oil and heat for 15-20 seconds, then stir-fry the shrimp for 40-50 seconds until they turn white, and remove.
  9. Stir-fry the ginger and garlic for 5 seconds, then the green onion for 10 seconds, then the blanched vegetables for 5 seconds, then the shrimp for 10 seconds.
  10. Add cooking wine and stir-fry for 10 seconds.
  11. Stir the sauce and add it, stirring for 12-15 seconds.
  12. Turn off the heat, add a little sesame oil, toss for 10 seconds and serve.
