How To Cook a Turkey
Ingredientes
- Turkey12–15 lb
- Each salt and pepper1 colher de sopa
- Chicken broth½ xícara
- Butter4 colheres de sopa
- Hot saucea few dashes
- Parsley½ maço
- Apple1
- Onion1
- Garlic5 dentes
- Rosemary · dried2 colheres de chá
- Extra melted butter or oil for basting
Modo de preparo
- Preheat the oven to 325°F.
- Remove the neck and giblets and save them for gravy.
- Leave the turkey at room temperature for one hour so it fully thaws.
- Rinse the turkey inside and out with cool water, then drain and pat dry with paper towels.
- Season the inside and outside with salt and pepper.
- Coarsely chop the apple, onion, two garlic cloves and the parsley stems, and put them in the cavity.
- Mix the broth, 4 tablespoons melted butter and Tabasco. Inject this into the breast in an even pattern, saving a little for basting.
- Mince the remaining garlic with the parsley leaves and mix with the rosemary and sage. Loosen the skin from the breast and push the herb mixture under it as far as possible.
- Truss the turkey if you like; this looks nicer but adds cooking time.
- Place the turkey on a heavy rack in a deep roasting pan and pour the remaining injection sauce over it.
- Roast for 12 minutes per pound, basting with extra melted butter every 30 minutes.
- Remove when the thigh reaches 170°F.
- Rest for 30–40 minutes before carving.
