Ingredients

Instructions

  1. Set a stainless steel pan over medium heat and let it warm for 2 minutes.
  2. Crack each egg into a separate small container or two at a time, not straight into the hot pan.
  3. Chop the fresh herbs such as basil, thyme, chives, parsley or oregano.
  4. Add the fat to the pan and lightly salt the bottom to help prevent sticking.
  5. When the fat begins to smoke, add the eggs and cook over medium heat for about 5 minutes, keeping the heat gentle so the whites do not brown heavily underneath.
  6. Turn off the heat and let the eggs sit in the pan for 2 more minutes.
  7. Season the tops lightly with salt and finish with your favourite herbs and spices.
