How To Cook Picanha Right Every Time
Ingredients
- Whole picanha1
- Beef
Instructions
- Season the picanha with a light coat of Swine Life Prime Beef Rub, then a layer of Killer Hogs Steak Rub.
- Let it sit at room temperature for 30 to 45 minutes while the grill comes up to temperature.
- Set up the grill for indirect cooking and stabilize the temperature at 275°F.
- Place the picanha on the grill and cook until the internal temperature reaches 128–130°F, usually about 1.5 hours, going by internal temperature rather than time.
- Take it off at 128–130°F and leave the probe in. Let the temperature rise during the rest; once it peaks and starts to fall, move on to the sear.
- Open the vents and lid so the fire gets hot, then put the picanha directly over high heat.
- Flip it every minute and sear for 3 to 5 minutes total, until a crust forms.
- Rest briefly, then slice against the grain.
